    So, apparently it comes from “quesada” which was a form of cheesecake, and the “illa” diminutive ending. Over time it has come to mean a fried tortilla with cheese and other fillings… except

    In Mexico City, quesadillas don’t necessarily have cheese in them. The rest of the country makes fun of them for it. But, if you’re ever in Mexico City and want a nice cheesy quesadilla, be sure to order a “quesadilla con queso”.

    Damn it, now I’m hungry.
